Pancakes shelf life development

Hi guys!! I am using coconut flour in my pancakes which is decreasing the shelf life of pancakes. Suggest me some alternatives?

    Dryness reduction? add glycerin then coconut flavor..or if you can find heat treated coconut flour, defatted coconut flour that might reduce your problem.

    Actually it's Millet based pancake and we are making it clean label, so for mouthfeel we need some fatty content and we are using coconut and almond flour flour
