Once you break the coconut shell to expose the coconut meat,it will soon spoil and there is no effective preservation for it as is..
You can put in the fridge but it will gradually spoil due to fat degradation..Coconut contains lauric acid which us susceptible to formation of soap( laureates). which creates off taste .
