Value addition of raw pineapple juice

Dear All,

We are processing raw, green pineapple for cake application. During this process, we will be left with pineapple juice having a brix of 4°.

Any suggestions on how we can utilise this juice.

We need more details. Which technology do you use? What type machines?

We make fruit cuts for cakes. Technology is simple-cutting, dicing. Pineapple juice is obtained during pre- processing stage.
