Introduction

Demand of nutrition based functional food biscuit increasing rapidly due to the increasing awareness about the health, avoiding unhealthy backing foods and sufficient amount of nutraceuticals activities . The consumer trend has widened, many have begun to look at food not only for its basic nutrition but also for the allied health. Benefits.black seed termed as herbal .They have most health benefits and nutrition.Fixed oil and essential oil are obtain from black seed. That fixed oil is a rich source of polyunsaturated fatty acids, tocopherols and to some extent thymoquinone, whilst essential oil is abundant in bioactive molecules like thymoquinone, p-cymene, carvacrol, α-thujene and thymol. It has many biological effects such as anti-inflammatory, anti-hyperlipidemic, anti-microbial, anti-cancer, anti-oxidant, anti-diabetic, anti-hypertensive, and wound healing activities.

Biscuits ,being higher in fat contents, would be a better carrier for provision of desirable quantities of antioxidants and tocopherols to the vulnerable segments by adding black cumin fixed and essential oil in various proportions. flour, water, fats (black seed Fixed oil and essential oil), sugars (sucrose, invert) and chemical leaveners (ammonium bicarbonate, sodium bicarbonate, citric acid and sodium acid pyrophosphate).

Keeping in view the above, the present research proposal was designed to Development black seed oil (fixed & essential ) functional food biscuit and it will be a best value added product in food in market.

The purpose of the research is we can develop adding up of black cumin fixed and essential oils in Cereal-based food products like biscuits and we can eat this daily an alternative for high calories biscuits. Because of these, we can cure our health issues and nutritional problems as soon as possible.

There are lots of articles about thymoquinone ,but as as food application specialist( as my main concern in connection to this article);I would rather add (black cumin) nigella sativa seed as inclusions and topping for savory biscuits and cookies than as pure extract… It’s simple and the presence of visible seeds is more practical and adds to the visual appeal and savory taste and texture in the end product.

As we see the today’s situation during covid every one want to live healthy n safe life ,using black cumin is one of the best thing to.ise during these days.
For biscuit we can use some thing like cinnamon turmeric and some other immune boosters to biscuit for enhance taste n make it suitable to consume during covid.

Black coconut shell colour and is being used in ciabatta with sesame seeding on top. A flavour like black cumin can fit in with this theme as well, or chilli flake and cumin.

Hello Abdullah black seed oil is a really good oil. The product you intend to use is also an oil that oxidizes very quickly. It should be used immediately after the seed oil is removed. Before using black seed oil, you can minimize oxidation by blending it with maltodextrin and bonding it. Try using it in the biscuit dough after this process.
