Potassium carbonate
Sodium bicarbonate
Sodium tripoly phosphate
In kansui solution which is used in noodles industry to make the dough.

0.1 %gum(guar,or CMC),K2CO3, STPP
0.2 Na2CO3,
1% NaCl.all based on flour weight.
