Before talk process details we need a recipe to understand process exactly.

A basic recipe can be as below for hazelnut spread with cocoa about 0,3 ton.

70 kg vegetable oil
140 kg sugar ( sucrose )
25 kg hazelnut paste
25 kg whole or skimmed milk powder or whey powder
35 kg cocoa powder.
2,5 kg Lecithin

This recipe is an example recipe. It depends on what you want.

to produce a hazelnut spread you need machines which are listed below.

  1. A sugar grinder
  2. A ball refiner
  3. Stock tank

Lets produce cocoa spread with hazelnut

step 1: Grind sugar to make it powder, approximately 20 micron.
Step 2 : Add all ingredient except lecithin in ball refiner.
Step 3 : start refiner and run it about 10 minutes
Step 4 : Stop machine , add lecithin
Step 5 . Run machine about 1,5 or 2 hours.
Step 6: Stop machine and check your product.
Step 7. Yuppi, your product is ready to packaging.
