Pancakes shelf life development

Hi guys!! I am using coconut flour in my pancakes which is decreasing the shelf life of pancakes. Suggest me some alternatives?

To reduce dryness in pancake and give characteristic flavour

Dryness reduction? add glycerin then coconut flavor…or if you can find heat treated coconut flour, defatted coconut flour that might reduce your problem.

Actually it’s Millet based pancake and we are making it clean label, so for mouthfeel we need some fatty content and we are using coconut and almond flour flour

Its an ambitious project but you still dont understand the technology to achieve it and youre jumping immediately to clean label?
You will not get anywhere with such mindsets.
Do it gradually and learn how to get a good pancake with standard material. Once you understand what you are doing then you raise your standard and explore various suitable ingredients to attain it.
