I haven’t started it yet. I just wanted something interesting linked with olive oil that(any research that i can do) for my thesis

Are olives grown in your place. It would be great to have a topic to study on its composition (or even fatty acids) depending on the cultivar or harvest (place, time, period etc).

You might want to look if there’s a relationship between lipid oxidation and levels of antioxidant content throughout storage/shelf life.
