I would have some help storing gummies. I made a lot of gummies (with CBD) for some client in Europe, in the laboratory texture was great and after an hour’s journey (air-conditioned car, outside temperature 32 degrees), the candies have melted. Formulation is as follows: glucose syrup, sugar, citric acid, gelatin, water, flavor, color.
What can I do in order to keep the texture over time ?

Use thin boiling starch…and pectin as well…

Hi,
Is the temperature of the mixture more than 100°C? If yes, that causes flaws to the gelatin structure.
Do the gummies have enough time to dry before are ready to be packaged?
Maybe the need to be coatted (with an edible wax for example).

Sugar coating also helps up to some extent.
