I want to create a vegan gummy with xylitol but no other sugar/syrup/sucrose. Can I use carragenan buffered with trisodium citrate to get the gumminess as pectin or agar agar don’t have the gummy tecture needed?

You can try .blend . gellan gum and iota tyoe carrageenan.
Contact Kelco as they have the Genutine ( carrageenan) and kelcogel ( gellan) to satisfy your requirements…
Just specify your texture requirement so they will recommend a special grade. of each with recommended proportions between carrageenan and gellan…
