You should try it yourself, there are plenty of recipes of eggless cakes in the web. Do your experiments comparing eggless and normal cake in cupcake sizes…

Look up a recipe from the depression, called Whacky Cake. Eggless, and the per serving cost is hard to beat. OIngredient list is clean. Depends on your needs, but we made a killing selling this stuff when I worked in the restaurant trade. That cake enrobed with a really dark, not too sweet ganache is a great product.
