What is the FSSAI regulation that gives the fruit juice content present in each fruit such that when we use the concentrate form we can calculate the fruit juice delivery

You should look that up in FSSAI documents…I doubt if anyone here are very familiar with the particular aspect.
Please do some work, and conduct a web search…

Get in touch with people at Doehler India, they are experts of beverages specially from fruit juice concentrates.
They are well trained and follows this handbook (strictly internal document) which has all the details of the calculations of juice concentrate to juice content calculations.

Actual fruit juice content of a fruit juice concentrate can only be given by the manufacturer . Typically such information is recorded in COA and product specification of the manufacturer.
Different fruit products are mandated to have differing fruit content as per fssai standard formulations. So u have to look at the product u wish to process to know the reqd juice / pulp content.
E.g - jam must have 50 % fruit pulp/ juice content and a fruit crush shall have 25%…so you see you have to check product wise…if u differ from these then it will become proprietary foods and u can no longer call it a JAM or a FRUIT CRUSH
In case your desired product does not have any standard in Fssai then that becomes a proprietary food and you will have to submit your products name , it’s ingredients and other data to fssai and it will be automatically approved provided all ingredients are listed in Fssai and u use it within the prescribed maximum limit .
In case your product intends to use a novel ingredient , or a listed ingredient in a novel way , you will have to take product approval by submitting safety data and formulations to Fssai .
