PLEASE explain what kind of cookies .If possible show the recipe and explain the method of preparation so we can see how we can improve it exactly…

We are not fortune tellers "guessing answers out of thin air "here but a group of scientific minds., Therefore in order to solve a problem there should be sufficient information that we can use to analyze and determine the cause of the fault ,if there something that can be done and if there is how to resolve it properly…

I recently achieved an 8 % volume increase by changing the raising agent in a simple sugar margarine biscuit. The biscuit only used sodium bicarbonate (50g) in a batch and by adding an extra ammonium bicarbonate (25g).

We saw the volume increase marginally by height but biscuit increased in circumference.

The same number of biscuits (20g) dough shaped, in a bucket used to weigh 4.05 kg, whilst the new biscuit had same amount of biscuits occupying the bucket weighed 3.72kg. This indicated a volume increase.

The extension can be increased, as at this level there was no taste comprise with the new and increased raising agent. Hope this can help. Try a small amount of dough and do a test bake and then a 50% batch.
