Can any one tell me easy method to get spicy chocolate for couverture chocolate
You should used oil based spice flavors of your choice which you add into your ingredients during chocolate / ball / roll refining process.
Ask your flavor supplier for such items…
there are two different possibilities : 1 - to fill the spicy in entire mass of chocolate or 2 - to find the spicy pits only time to time when bite the product with small pick of spicy touch. for first you can use extracts based on oils, for second you must play with the spice it self or pieces of same materials already covered/ infused with spicy.
