The strong elastic nature is due to too much protein in your recipe.If you don’t want reduce the milk powder, cut the gelatin quantity by half…
Both gelatin and milk powder when dispersed in water become foaming agents during the whipping process…
Normally marshmallow does not contain milk powder ,but you need it for the milk taste it can confer to your confection.
Test it get Brix readings again …
