We are in the process of debugging a production line for gelatin candies. The line is starch-free, with aluminium moulds coated in Teflon. We have a recipe that produces good results in terms of consistency and taste, but we anticipate that the finished product will stick together during storage. We’d like to describe our recipe and technological process in order to identify potential causes of sticking and solutions to the problem.
Do you use anti-sticking agent after demoulding?
Unfortunately, we do not use any anti-sticking agent after demoulding. Could you suggest any? I also understand from my observation that the gummies should dry well so that they do not melt. Can we enhance the drying time by any chance?
