hi every one ;i need to know how much gum arabic (E414) to make the chocolate dragees shine
IIRC in chocolate panning Carnauba wax preparation like CAPOL from Germany is used as glazing agent .

can you please give me more explication an the glazing method
Also you can use gum arabic solution for chocolate coated dragees for shining. Not hard sugar coated but.
And you need shellac for glazing.
