Anti thickening agent for payasam using rice ada

while retorting the payasam using rice ada, the product is getting thickened which will be not consumer acceptable . is there any additive for anti thickening of this product.

If this is available in dry mix ready to cook format with a good shelf life currently, why would someone go for this cooked product.
