Gummy Candy! (Need sugar or not?)

Hi All! What can we put to make Gummy Candy rather than sugar (let's say we want to make sugar free gummy candy)? And why?

Inulin and or palatinit. You must still add a little sweetener with. You need the bulking property of sugar as well as a sweetener to compensate for loss of sugar sweetness.

Contains maltitol syrup which is a sugar replacer but unfortunately has a laxative effect if you consume so much of the candy..

Is this a gelatin based or pectin based gummy?

  4. Cecilia Chandra reply

    It's gelatin based candy

You can try mixing arrowroot powder and stevia into the mix. it would increase the elasticity of the candy.
