Composites of Pea Protein Nanofibril and Epigallocatechin Gallate: Formation Mechanism, Structural Characterization, and Antioxidant Activity

The EGCG/PPN composite, prepared by combining pea protein nanofibrils (PPNs) with epigallocatechin gallate (EGCG), could be used as a multifunctional nanocarrier.
