Advances in Resistant Starch Research from Agro-Industrial Waste: A Bibliometric Analysis of Scientific Trends

This study comprehensively analysed the scientific production of the extraction, characteri- sation, and toxicological risk of resistant starches obtained from agro-industrial by-products. Articles indexed in the Scopus database between 2015 and 2025 were analysed.
