Protein-polyphenol-based delivery vehicles are effective strategies for encapsulating bioac- tive compounds, thereby enhancing their solubility and bioaccessibility. In this study, dihydromyricetin/soy protein isolate (DHM/SPI) complexes were used as emulsifiers to prepare Pickering emulsions for DHM delivery.
